I need to work on my open chords.
Memorizing them and playing them. I struggle with this due to my favorite music being largely metal and I dont use open chords very often. So I memorize them, practice them for a few days then promptly forget again due to lack of use....
What are some good songs to practice open chords with?
Acoustic or electric doesn't matter. I'm cool with both. I'm not a country fan in the least bit so I'd like to stay away from that if possible.

The Eagles are another great band that uses lots of open chords.

Another technique is to let open strings ring out when playing chords. Alex Lifeson was a master at this.

My immediate response to this thread was: AC / DC as well !
However, another one you might want to try are the songs from the Nirvana MTV unplugged session. Mainly the way he would hit the open strings between chord changes in order to give that extra feel to the music.
Nice little technique when playing acoustically.

I'd say Beatles because you'll understand the relevance of a 7th chord by trying these. www.chordie.com has thousands of good songs including all the Beatles stuff. For open chord stuff I'd also suggest the following songs:
REM - Man On The Moon
" " - Everybody Hurts
Elton John - Your Song
Roberta Flack - Killing Me Softly With this song
Oasis - Wonderwall
" - Let There Be Love
" - Little By Little
LOTS of Eagles stuff as already suggested.
Daughters by John Mayer and Message In A Bottle by The Police are both pretty challenging chord wise also.
I've got loads more but what I would say is, just because you don't like the song or style doesn't mean you shouldn't try the song to see what the chord does to the sound. The Beatles were masterful at using 7th chords (which sound pretty dull when played by temselves) to change the mood of a song or bring it up a gear.
